Personally, I'm not the world's biggest smoked salmon fan but people devour this when I make it for catered parties so I thought I'd share. Ingredients:
1 large package norweigan smoked salmon |
1-2 small handfuls of capers |
3-4 lemons, sliced |
2 english cucumbers |
1 red onion, chopped and rinsed (very important to rinse!) |
fresh chives (or dill) to garnish |

Directions:
1. Place the salmon in the center of a large platter (all white looks the best). 2. With a sharp vegetable peeler, make long ribbons out of the cucumber. Roll each slice up. Place along each side of salmon. 3. Pour red onion along side cucumber ribbons then arrange halves of lemon slices all around the platter. 4. Sprinkle salmon with the capers and garnish with fresh chives or dill. 5. Serve with fresh, toasted bagels and whipped cream cheese. |
