I made up this recipe because I love smoked salmon and I needed something easy to make when I was expecting out of town company that would be arriving late Ingredients:
1 lb salmon fillet |
1 sweet onion |
1 beefsteak tomato |
1/2 cup mozzarella cheese |
4 tablespoons mayonnaise |
1 tablespoon lemon zest |
1 tablespoon lemon juice |
3 tablespoons capers |
3 loaves ciabatta |
Directions:
1. Make your mayonnaise spread with the mayo., capers, zest and lemon juice. 2. In a stove top smoker, smoke your salmon with alderwood chips. Smoke for about 25-30 minutes or until fish is completely cooked. 3. Now assemble your panini with the Salmon, tomato, onion, mayo and mozzarella and place in your panini press and cook for about 8 minutes. |
