Smoked Salmon, Onion, & Cucumber Brunch Salad |

I saw a similar recipe in one of Martha Stewart's Everyday Food magazines and let it inspire me to create this dish for a brunch party. It was so simple and yummy! Ingredients:
1 lb smoked salmon, good quality |
1 sweet onion, preferably vidalia |
1 english cucumber, thinly sliced in half moon shapes |
1 tablespoon rice wine vinegar |
1 tablespoon olive oil |
1 teaspoon honey |
1 tablespoon parsley, fresh chopped |
2 teaspoons chives, fresh chopped |
1 teaspoon lemon zest, finely minced |
1 clove roasted garlic, finely minced |
salt |
pepper |
cream cheese |
bagel |
Directions:
1. In a glass bowl, whisk together vinegar, olive oil, honey, garlic, and lemon zest. 2. Add onions, cucumbers, chives, parsley, and smoked salmon to the bowl and toss. Season with salt and pepper to taste. 3. Serve immediately with cream cheese and bagels. This can be refrigerated for up to 4 hours maximum. 4. I like this dish for brunch with a crisp pomegranate mimosa :). |
