My first attempt at a smoked salmon mousse. The recipe I tried first wasn't salmony enough for me, so I chucked a load more in. I also experimented with some different additions; a little horseradish in one mix, a little crushed garlic in another, and a splash of Tabasco in a third, but I preferred the plain one, so that's what I served up. Try for yourself and see what you prefer. Ingredients:
200 g smoked salmon |
200 g cream cheese |
2 tablespoons double cream |
1 tablespoon chopped dill |
1/2 lemon, juiced |
1 pinch salt |
Directions:
1. Blitz the salmon in a food processor until smooth. 2. Mix in the remaining ingredients. 3. Chill and serve. For a special look, line a ramekin with smoked salmon, spoon the mousse inside and turn out onto the plate to make a little parcel. 4. Serve with lemon wedges and fresh black pepper, with a little dill to garnish. |
