From Quick Fixes magazine. Be careful not to overcook the salmon. Ingredients:
1 onion, finely diced |
1 tablespoon butter |
1 1/2 lbs potatoes, diced |
2 cups chicken broth |
2 cups milk |
12 ounces smoked salmon, sliced in ribbons |
1 lemon, juice of |
chopped fresh parsley, to garnish |
Directions:
1. Fry the onion slowly in butter until soft and translucent. 2. Add potatoes, broth and milk. Bring to a boil, reduce to a simmer, and cook until potatoes are tender, 15-20 minutes. 3. Add salmon, lemon juice and parsley. Cook just a minute or two until the salmon is warm. |
