This is my mother's recipe. It sounds like the strangest combination ever, but the flavors go together beautifully. No, really! A great brunch dish, or you can use it as an appetizer. Ingredients:
3 8oz. packages of cream cheese, softened |
5 eggs |
1 pint of sour cream |
1 small onion, minced finely |
1/2 - 1 cup capers (optional) |
1/4 lb. smoked salmon, diced (save 2 or 3 strips to make roses for |
decorating the top) |
small leafed parsley for garnish |
Directions:
1. Preheat oven to 325. 2. Put cream cheese in mixer or Cuisinart and whip. 3. Add eggs one at a time, allowing each one to blend before adding the next. 4. Lower speed and add sour cream, onions (raw, sauteed, or softened in microwave) and diced salmon. 5. Place in spring form pan and bake for about an hour. 6. Garnish with smoked salmon roses with a sprig of parsley tucked under each rose. |
