Smoked Salmon and Goat Cheese Salad |

Ingredients:
1/4 cup fresh lemon juice |
1 tablespoon water |
1 tablespoon minced peeled fresh ginger |
1 tablespoon honey |
1 teaspoon chopped fresh dill |
1/4 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons extra-virgin olive oil |
8 cups gourmet salad greens |
8 ounces smoked salmon, sliced and cut into thin strips |
1 (3.5-ounce) package goat cheese, cut into 4 equal slices |
1/4 cup very thinly sliced red onion |
Directions:
1. Combine first 7 ingredients in a blender; process 30 seconds or until smooth, scraping sides. With blender on, slowly pour oil through food chute; process until thickened. 2. Place salad greens on individual plates; top each evenly with salmon, cheese, and onion; drizzle with dressing. Serve immediately. |
