This fast, flavorful meal is a crowd-pleaser. The first time I served it to a small group, two people asked for the recipe. It's quick, easy, and sure to please!
Ingredients:
4 ounces salmon fillets, smoked and flaked (i use echo falls cajun flavor found near the fish counter at my local grocery store)
1 green pepper, sliced in thin strips
1 yellow pepper, sliced in thin strips
3 tablespoons olive oil
3 tablespoons capers, drained
1 cup cherry tomatoes, cut in half
1 lb linguine, cooked to taste
parmesan cheese, for topping
salt, for pasta water and to taste
Directions:
1. Boil salted water and cook noodles to taste. Drain and cover, set aside.
2. Heat large saute pan. Add olive oil, capers, peppers, cherry tomatoes, and cook until tender, not soft and should still be bright in color.
3. Add salmon and heat through.
4. Add pasta to pan and warm through.
5. Serve in large bowl and top with Parmesan cheese if desired.
