                    A nice alternative of the smoked salmon ol-au-vent, but can also serve as a light starter. Ingredients: 
                    
                        
                                                6 pieces of smoked salmon  |  
                                                cream cheese  |  
                                                1 packet oatcakes/belini's  |  
                                                6 thick slices of brie  |  
                                                fresh dill to serve.  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Preheat the grill. 2. Heat 6 Oatcakes/Belini's as per the packet instructions (normally a minute in the micro or 2 mins under grill.) 3. Spread each oatcake with cream cheese. 4. Top with a slice of salmon. 5. Add chunk of brie on top of the salmon. 6. Pop on a greased baking tray and put under the grill until the brie has melted. 7. Top with a stem of dill and serve immediatly on a tray as an appetiser, or allow 2 each guest on a bed of rocket salad and halved cherry tomatoes dressed with lemon juice as a first course.                              |
