Smoked Salmon and Blueberry Kahlua Salad |

This is a very tasty, delicious salad, and the dressing is just absolutely something special - I really love it!! Ingredients:
4 cups baby spinach |
12 ounces smoked salmon |
1/4 cup red onion, sliced |
4 ounces goat cheese, crumbled |
4 ounces walnuts, coarsely chopped |
1 cup blueberries (wild or cultivated) |
1/2 cup white sugar |
2 ounces van dyke's blueberry juice |
2 ounces kahlua |
Directions:
1. Combine all the dressing ingredients in a medium saucepan, mash with a fork and bring to a boil, reduce heat to medium-low and simmer for five minutes. Remove from heat and purée until dressing has a smooth consistency, then cool. 2. To assemble the salads, divide the spinach between 4 salad plates. Place 3 oz. of smoked salmon on top of spinach. Top each salad with 1 oz of crumbled goat cheese. top each salad with an equal amount of the red onion and walnuts. Drizzle each salad with the cooled blueberry dressing. ENJOY! |
