Smoked Rannoch Ham and Mango Salad

A really easy but wonderfully tasty salad suitable for light lunches, starters of side dishes.
Ingredients:
100 g smoked rannoch ham
1 large mango, removed from stone and cut into strips
125 g mozzarella cheese, cut into strips
handful basil leaves
3 tablespoons olive oil
1 teaspoon honey
2 tablespoons lemon juice
Directions:
1. Whisk together the olive oil, honey and lemon juice to make a dressing.
2. Combine the mango, mozzarella and basil leaves in a large bowl.
3. Divide the salad between two bowls, top with the prosciutto slices and serve with the dressing.
