Smoked Rannoch Ham and Mango Salad |

A really easy but wonderfully tasty salad suitable for light lunches, starters of side dishes. Ingredients:
100 g smoked rannoch ham |
1 large mango, removed from stone and cut into strips |
125 g mozzarella cheese, cut into strips |
handful basil leaves |
3 tablespoons olive oil |
1 teaspoon honey |
2 tablespoons lemon juice |
Directions:
1. Whisk together the olive oil, honey and lemon juice to make a dressing. 2. Combine the mango, mozzarella and basil leaves in a large bowl. 3. Divide the salad between two bowls, top with the prosciutto slices and serve with the dressing. |
