The smoked rabbit adds such good smoky flavor to the chicken in the gumbo. Serve over rice and a side of potato salad.....great meal! Ingredients:
2-3 lb smoked rabbit, cut into 10 pieces |
3 lbs. skinless, boneless chicken thighs |
1 lg onion, chopped |
1 bell pepper, chopped |
1 jar of dry roux |
6 qts of water |
salt, pepper & creole seasoning to taste |
l don't use oil, but you can saute veggies in about 2 tbs of oil |
you can also add okra to this also |
Directions:
1. Saute onion & bell pepper till soft 2. Add chicken and cook for about 5 mins 3. Add about half the jar of dry roux and stir in about 2 cups of the water. 4. Stir until it is blended. 5. Add remaining water and roux. 6. Bring to a boil 7. Add the rabbit and seasonings 8. Cover and let simmer for about 2 hours 9. Adjust your seasonings to taste. 10. Serve over rice and enjoy! 11. it's even better the next day... |
