Smoked Paprika Shrimp With Lime Dip |

I found this in a 2006 Food and Drink Magazine and have had it in my To Try pile since! So glad I got around to giving it a whirl last night. It's very yummy and looks really fancy! Ingredients:
lime dip |
1/4 cup sour cream (i used low fat) |
2 tbsp. mayonnaise |
1 tsp. grated lime rind |
1 tbsp. fresh lime juice |
shrimp |
2 tbsp. vegetable oil |
1 large shallot, minced |
1 tbsp. smoked paprika |
2/3 cup dry white wine |
16 jumbo raw shrimp, peeled and deveined |
Directions:
1. To make the lime dip, whisk together sour cream, mayonnaise, lime zest and juice in bowl. Set aside. 2. In a large nonstick skillet, heat oil over medium-high heat and saute shallots and paprika for 2 minutes or until turning golden. Add wine and bring to boil. Boil for about 2 minutes or until reduced by half. Add shrimp and cook, stirring constantly for about 4 minutes or until shrimp is pink and firm. 3. Serve shrimp with dip. |
