Ingredients:
1 tablespoon(s) brown sugar |
1 teaspoon(s) cinnamon |
1 teaspoon(s) grated orange peel |
2 tablespoon(s) olive oil |
1/4 cup(s) orange juice |
2 pound(s) salmon fillets |
sea salt to taste |
1 tablespoon(s) smoked paprika |
1 bag(s) spinach |
2 teaspoon(s) thyme leaves |
Directions:
1. Mix: Orange juice, tablespoons the oil and 1 teaspoon of the thyme in a small bowl. Place Salmon in large glass dish. Add the marinade and turn to coat well. Refrigerate for at least 30 min. 2. Mix: Sugar, Smoked Paprika, Cinnamon, Orange peel, remaining 1 teaspoon oil and salt in a small bowl. Place in a greased foil-lined baking pan. Rub top of Salmon evenly with Smoked paprika mixture. 3. Roast: Salmon in preheated 400 degree oven for 10-15 min. Heat 1 teaspoon oil in large skillet on medium heat. Add Spinach: cook and stir until wilted. 4. Serve"Salmon over Spinach |
