Smoked Paprika Roasted Salmon

Ingredients:
1/4 cup(s) orange juice
2 tablespoon(s) plus 1 teaspoon olive oil, divided
2 teaspoon(s) thyme leaves, divided
2 pound(s) salmon fillets
1 tablespoon(s) brown sugar
1 tablespoon(s) smoked paprika
1 teaspoon(s) saigon cinnamon
1 teaspoon(s) grated orange peel
1/2 teaspoon(s) sicilian sea salt
1 10-ounce bag(s) fresh spinach leaves
Directions:
1. MIX juice, 2 tablespoons oil and 1 teaspoon of the thyme in a glass dish. Add salmon; turn to coat. Cover. Refrigerate 30 minutes.
2. MIX sugar, remaining spices and orange peel. Remove salmon from marinade. Place in foil-lined baking pan. Discard any remaining marinade. Rub top of salmon evenly with spice mixture.
3. ROAST in preheated 400°F oven 10 minutes or until fish flakes easily with a fork. Heat remaining 1 teaspoon oil in a large nonstick skillet on medium heat. Add spinach, cook 2 minutes or until wilted. Serve with salmon.
