Smoked Oyster Stuffed Mushrooms |

A wonderfully delicious appetizer. Or do as my daughter and I do, use the appetizer as an entree.(the number of servings would be lower than that which I've given.) Found this on the internet quite awhile ago. Ingredients:
1 teaspoon olive oil |
2 tablespoons finely chopped onion |
1/2 teaspoon minced garlic |
1 (3 oz.) smoked oysters, drained or buy the kind in the pouch |
1/4 cup italian seasoned bread crumbs |
2 tablespoons fresh, grated parmesan cheese |
2 tablespoons white wine |
1 lb. large mushrooms, washed and stems removed (chop stems) |
diced pimento or diced red bell peppers (garnish) |
Directions:
1. Preheat oven to 350° F. In medium skillet heat oil until hot then saute onion and garlic until tender. Stir in the smoked oysters, bread crumbs, cheese, wine and chopped stems; blend well. Fill each mushroom cap with oyster mixture. Place in 13x9x2-inch baking dish. Bake, 20 to 25 minutes or until mushrooms are tender. Garnish with chopped pimento. Makes 8 to 12 servings. |
