I got smoked mussels on sale and couldn't figure out what to do with them and came up with this recipe.
Ingredients:
1 pound smoked mussels...not from a can
1/2 pound medium shrimp, shelled and deveined
6 medium size red potatoes, diced with skin on
1 onion, diced
1/4 pound bacon, diced
1/4 cup butter
3 ribs celery, thinly sliced
1 cup clam broth
2 cups half and half
3/4 teaspoon dried tarragon
2 cloves minced garlic
salt and pepper to taste
3 tablespoons fresh parsley chopped
2 tablespoons snipped fresh chives
Directions:
1. Brown bacon in large skillet. Remove bacon and drain fat, reserving 1 tablespoon. Add potatoes, celery, onion and garlic to reserved bacon fat and fry until potatoes are semi-tender.
2. Meanwhile, heat clam broth and cream in a large kettle. Add potato mixture to cream. Add butter and bacon and bring to a low simmer. Cook until potatoes are very tender. Add mussels and shrimp and cook for 10 minutes until shrimp are pink. Add salt and pepper to taste, dried tarragon and parsley. Cook for 3 minutes more. Add chives and serve.
