1 lb smoked mozzarella cheese, coarsely chopped |
1/4 cup extra virgin olive oil, plus |
1 tablespoon extra virgin olive oil |
3 tablespoons sun-dried tomato pesto |
1 tablespoon chopped parsley |
salt & freshly ground black pepper |
flatbread cracker, for serving |
Directions:
1. In a food processor, combine the mozzarella, olive oil and pesto and process to a coarse paste. 2. Scrape into a bowl. 3. Stir in the parsley and season with salt and pepper. 4. Serve with flatbread crackers. |
