Smoked Mackerel Pate in Lemon Cups |

It looks really pretty and you can make it ahead of your party. Pop it on a pretty plate, stick a bay leaf on top and serve with toast triangles. Ingredients:
350 g smoked mackerel fillets, skinned |
150 g butter, softened |
150 ml sour cream |
2 -3 tablespoons lemon juice |
salt and pepper |
1 pinch cayenne pepper |
6 lemons |
6 small bay leaves |
toast, triangles |
Directions:
1. Put the mackerel, butter, soured cream and lemon juice into a blender or food processor and blend until smooth. Add the seasoning to taste. 2. Cut the tops from 6 lemons and carefully remove the flesh. Spoon the pate into the lemon shells. Top with the bay leaves. 3. Chill. |
