while camping in the florida keys every winter we catch lots of kingfish, one of the best things to do with them is to smoke them on a weber charcoal grill. Ingredients:
10-12 ozs smoked kingfish or spanish mackrel, skin and bones removed |
2 tablespoons good olive oil |
8 oz. philly cream cheese |
small onion , minced |
juice and zest of one lemon |
3 cloves garlic, minced |
1/2 red pepper, finely chopped |
dash of tobasco sauce |
salt and pepper |
canned condensed milk |
Directions:
1. grate smoked kingfish on vegetable grater 2. add cream cheese, olive oil, vegetables, salt and pepper, lemon juice and zest and tobasco, thuroughly mix with fork 3. add condensed milk until texture is as desired 4. serve with crackers or thinly sliced toasted baguette |
