Smoked Country Bacon and Potato Chowder |

This is another recipe that I found in our Regional magazine Saltscapes and it was so delicious!! Use your favorite smoked bacon, or you can also use regular bacon. Ingredients:
8 slices smoked country bacon |
1 cup yellow onion, chopped |
3 cups raw potatoes, diced |
2 2/3 cups chicken stock |
1 chicken bouillon cube |
1 tablespoon flour |
1 cup heavy cream |
salt and pepper |
Directions:
1. Cut bacon into 1/2 inch pieces; cook in a large saucepan until crisp. Reserve bacon and 2 tablespoons of fat. 2. Sauté onion in fat until translucent; add potato, chicken stock and bouillon. Bring to a boil and reduce heat, simmering until thick. Add flour to cream and mix thoroughly, then add to chicken stock mixture. Add bacon salt and pepper, and heat to serving temperature. |
