Smoked Chicken Fillet and Avocado Vinaigrette |

This is a delicious extremely easy summery dish comprised of slices of smoked chicken and avocado, drizzled with vinaigrette, that can do as an entree, in place of a salad, or even as a main meal served with a green salad. The amount of ingredients described here would serve 2 people as a large appetiser or a small main meal. Ingredients:
1 smoked chicken fillet |
1 ripe firm avocado |
1 handful wasabi peas or 1 handful hazelnuts |
1 tablespoon white wine vinegar |
3 tablespoons olive oil |
1 tablespoon lemon juice |
1 pinch salt |
1 teaspoon fresh ground pepper |
1/2 teaspoon dijon mustard |
Directions:
1. Combine the vinegar, olive oil, lemon juice, salt, pepper, and mustard in a closed container and shake vigorously. 2. Slice the chicken fillet. 3. Slice the avocado. 4. Arrange in alternating slices on a plate. 5. Scatter hazelnuts or wasabi peas over the top. 6. Drizzle dressing over it. |
