Smoked Chicken and Sugar Snap Pea Salad with Mint |

This recipe can be prepared in 45 minutes or less. Ingredients:
2 smoked chicken breast halves (about 6 ounces each) |
1/2 pound sugar snap peas |
1 english cucumber |
3 scallions |
1/4 cup packed fresh mint leaves |
1 teaspoon minced peeled fresh gingerroot |
1 1/2 tablespoons olive oil |
1 1/2 tablespoons fresh lime juice |
Directions:
1. Discard chicken skin and cut meat crosswise into 1/4-inch-thick slices. Trim peas. Halve cucumber lengthwise and seed. Diagonally cut peas, cucumber, and scallions into thin slices and chop mint. In a large bowl toss together all ingredients and season with salt and pepper. |
