Smoked Bacon Butter Sauce for Lobster or Seafood |

This decadent flavoured butter sauce is a perfect partner with lobster or any other cooked seafood. Ingredients:
3 ounces double smoked bacon, finely diced |
1 large shallot, finely diced |
1/4 cup chicken stock |
1/4 cup white wine |
1 tablespoon cream |
3/4 cup unsalted butter, chilled and diced |
salt and pepper |
fresh lemon juice |
Directions:
1. Cook bacon in a small frying pan until fat has rendered. 2. Place bacon on a paper towel to drain. 3. Put shallots, chicken stock, and wine into a small saucepan and simmer until almost dry. 4. Add the cream and start to whisk in the butter, about 1 ounce at a time. 5. Allow the sauce to come back to a simmer after the final ounce of butter has been whisked inches. 6. Remove the saucepan from heat and continue to whisk for a moment longer. 7. Add the bacon and blitz the sauce with a stick blender. 8. Correct the seasoning and add lemon juice to taste. 9. Keep the sauce warm until ready to serve. |
