Smoked Aubergine Curry/baingan Ka Bharta

Ask any Indian about Aubergines and the first thing they'll come up with is-'Baingan(Aubergine) ka Bharta.It has a lovely smoky taste and is quick to make.Tastes great with Roti(Indian bread),naan,butter naan,or steamed rice. Read more .One of my absolute favourites.Do try it.
Ingredients:
1 large aubergine/eggplant/brinjal/baingan
1/4tsp-cumin seeds
1med sized onion chopped fine
2-tsp ginger garlic paste
2-chopped green chillies(can be adjusted to taste)
1/4tsp-turmeric powder
1/2tsp-coriander powder
1/4tsp red chilli powder(optional)
1/4 tsp-garam masala(optional)
salt to taste
1 med red tomato chopped fine
2-3 tbsp
olive oil
fresh coriander leaves for garnish
Directions:
1. 1.Wash and wipe the whole eggplant dry.
2. 2.on a stove top,over a low flame roast the aubergine all over,holding gently with its green part.take care not to burn it.
3. 3.once its seems a bit soft and done,turn off the flame and put it in a covered dish till it cools.
4. 4. Once cool,peel off its skin(it'll come off easily),and mash it to a pulp,if it has a lot off seeds,discard the seeds part and then mash it.
5. 5.now Heat oil in a pan,and add the cumin seeds,then follow the chopped onions,saute well till the onions are cooked,but dont brown them,
6. 6.now add the ginger-garlic paste,turmeric powder and the chopped green chillies.keep sauteing over a med flame
7. 7.Now add the chopped tomatoes and fry well till they dont look or smell raw.you can add some water if it sticks to the pan
8. 8.Add the coriander powder,red chilli powder,mix well and add the mashed Aubergine,salt mix well for 2 mins.Adjust the consistency.it shouldnt be too watery or too dry.just thick
9. 9. Finally garnish with some coriander leaves,and you can also add some garam masala is you wish for that extra spicy taste
10. 10.Serve hot with naans,tandoori roti,phulkas,or steamed rice
