Smoke Grilled Salmon Steaks With Seafood Rub |

From the McNew estate in Pasadena, Texas in 1987 Ingredients:
2 tablespoons lime juice |
1 shallot, minced |
2 garlic cloves, minced |
1/4 teaspoon pink peppercorns, crushed |
1/2 teaspoon dried thyme |
1/4 teaspoon dried dill |
1/4 teaspoon salt |
1/4 teaspoon dried tarragon |
4 salmon steaks |
olive oil flavored cooking spray, for spraying salmon |
1/2 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
Directions:
1. In a small bowl combine limejuice, shallot, garlic, peppercorns, 2. thyme, dill, salt and tarragon. Cover and store in refrigerator 3. until ready to use. Prepare charcoal grill for direct smoking. Use 4. one layer charcoal for traditional smoker and place food on middle 5. grate. Spray salmon steaks with olive oil spray. Sprinkle salmon 6. steaks with equal amounts of rub pressing rub into surface of both 7. sides. Season with salt and pepper. Let rest 10 minutes to marinate. 8. Place salmon steaks in center of cooking grate of fully smoking 9. grill or smoker. Smoke 10 minutes turning once halfway through 10. grilling time. |
