Smelts Baked in White Wine |

Smelts are usually pan-fried. This is a different way to cook them. Adapted from Fish Cookery of North America. Ingredients:
1 cup celery, chopped |
1/4 cup parsley, minced |
2 lbs smelt, dressed, washed and dried |
1/2 cup white wine |
1/2 cup fine breadcrumbs |
salt |
pepper |
cayenne |
1 cup mushroom, sliced |
6 tablespoons butter |
Directions:
1. Preheat oven to 500°. 2. Place celery and parsley in a greased baking dish. 3. Lay the fish on top. 4. Pour wine over fish. 5. Sprinkle with bread crumbs. 6. Add salt, pepper and cayenne. 7. Arrange mushrooms on top. 8. Dot with butter. 9. Bake, uncovered, for about 10 minutes, or until fish is cooked through, basting once with pan juices. |
