My dad made this for us when I was growing up. Loved it as a kid, love it now!!
Ingredients:
2 slices of bread
8 slices of bacon
4 spring onions
2 eggs
1 med. tomato
6 tiny pickled beets
1/2 tsp celery salt or ground celery seed
1/2 tsp thyme
1 tbs capers
2 oz. butter (clarified butter)
(use an individual serving size, 1 to 2 inch deep, oven proof, bowl/plate thingy).
Directions:
1. Remove the crusts from the bread, cutting each to the shape to fit the dishes. Cut the bacon into squares. Thinly slice the spring onions. Finely slice the tomato. Cut the beets into thin slices. Measure the spices and capers. Keep the butter chilled. Turn on the broiler. Heat the serving dishes.
2. Pour a little clarified butter into a frying pan heated over moderate heat. Add bread.
3. Add the bacon around the bread.
4. Turn the bread with tongs.
5. Transfer the fired bread and bacon into the 2 heated dishes.
6. Break an egg into each dish and sprinkle with the onions.
7. Lay the sliced tomato beside the eggand the beets along the side.
8. Season with the spices and the capers.
9. Cover each raw egg with a thin slice of butter.
10. Place the dishes under the hot broiler for 3 min.
11. Remove from heat and serve.
