Smashing Bean Dip of a Different Sort!

An unusual combination of ingredients. Makes this a wonderful addition to your Appetizer collection.
Ingredients:
16 ounces butter beans, drained
1/2 cup walnuts
1/2 cup olive oil
3 tablespoons lemon juice
3 garlic cloves, minced
2 teaspoons curry powder
Directions:
1. In a small skillet saute the curry powder in 1 T olive oil until fragrant. (I use Extra Virgin).
2. In a Food Processor combine curry mixture with all the ingredients and process until almost smooth.
3. Serve on slices of Yellow Summer Squash.
4. Sprinkle with additional Curry powder and some Sea Salt.
