Smashed Red Potatoes and Rosemary |

No butter, and healthy! Ingredients:
4 small red potatoes |
1/4 cup fat free half and half |
1 1/2 tbsp olive oil |
1/8 tsp rosemary, ground |
2 tbsp parsley, minced |
Directions:
1. Scrub potatoes. 2. In a small microwave-proof container, add about a half inch of water. Add potatoes, cover with plastic wrap, and nuke for about 5-6 minutes, depending on the size of the potatoes. Set aside. 3. Nuke the half and half for 20 seconds. Add to potatoes and add olive oil and rosemary. Mash. 4. At this point, the potatoes can be made ahead and reheated by microwave about 30 seconds. Stir and cover with parsley. |
