Smashed Potatoes with Green Garlic Butter |

They take on a green color and look great on the plate. Recipe courtesy of Bobby Flay, but tweaked to my taste. Ingredients:
3 lbs yukon gold potatoes, peeled and quartered |
1 cup heavy cream |
2 teaspoons salt |
1/2 cup butter, softened |
2 cloves garlic |
6 tablespoons chopped fresh parsley |
salt and pepper |
Directions:
1. Boil potatoes and salt covered with water until done. 2. Meanwhile, place butter, garlic and parsley in food processor and process until smooth. 3. Drain potatoes well and place back in pan over low heat. 4. Add cream and garlic butter and mash by hand. 5. Add salt and pepper to taste. |
