Smashed Potatoes With Bacon |

These potatoes are wonderfully rich and go very well with a seasoned steak. Ingredients:
1 1/2 lbs. new potatoes, quartered |
8 tbs. (1 stick butter) cubed |
salt |
1/2 cup heavy cream |
1 lb. of crispy bacon, chopped |
1/2 cup sour cream |
2 tbs snipped fresh chives |
Directions:
1. Put the potatoes in a pan and cover with salted water. 2. Bring pan to a boil and reduce to a simmer. 3. Cook the potatoes until fork tender, about 10 minutes. 4. Drain potatoes well. 5. Add the butter and cream. 6. Mash the potatoes until slightly smooth. 7. Add the bacon, chives and sour cream. 8. Season with salt and pepper to taste. |
