This is such a simple side dish that I use often. You can adjust the butter and sour cream amounts to satisfy your taste and diet. My measurements here are pretty rough estimates-I usually eyeball it, so keep that in mind. Ingredients:
2 small baking potatoes |
2 tablespoons butter |
1/4 cup light sour cream |
salt and pepper |
Directions:
1. Wash potatoes. 2. Prick potatoes for baking. 3. Bake in microwave until soft and cooked through (the time and power will depend on your microwave). 4. Place cooked potatoes in mixing bowl, add all other ingredients, and mash with potato masher until at desired consistency. |
