This is a light side dish low on calories (145 per serving). Good for those watching their weight. Just dont eat too many (good luck!) You also might want to wait until the potatoes cool a bit before you smash them. Read more . Dont want to burn your hand! Ingredients:
8 small red or white potatoes |
2 t olive oil |
2 t grated parmesan cheese |
1/4 t garlic powder |
pinch paprika ( i use cayenne pepper instead) |
pinch salt |
3 t finely chopped parsley |
Directions:
1. Preheat oven to 400 F. Line a baking sheet with foil and spray with cooking oil. 2. Place the potatoes in a saucepan, cover with water bring to a boil. Boil for 15 mins or just until fork-tender. Drain and palce on the prepared baking sheet. With the palm of your hand, press the potatoes flat, trying not to break them (cracks are normal) 3. Brush with 1 T of the olive oil. 4. Combine the cheese, garlic powder, paprika (or cayenne) and salt in a small bowl. Sprinkle half the mixture over the potatoes. Bake for 15 mins. Turn them over, brush with the remaining olive oil and sprinkle with the remaining cheese mixture. Bake for another 15 mins. Garnish with parsley. |
