Keep these on hand for quick burritos, or soft tacos. This also makes a great side dish. Ingredients:
1 medium onion, chopped |
1 teaspoon olive oil |
2 garlic cloves, minced |
1/2 cup tomato sauce |
2 (15 ounce) cans pinto beans, rinced and drained |
1 cup beef broth |
1 tablespoon hot sauce |
1/4 teaspoon salt |
1/4 teaspoon ground cumin |
1/2 teaspoon pepper |
1 -2 tablespoon red wine vinegar |
Directions:
1. saute chopped onion in hot olive oil in a pan over medium high heat for 5 minutes, or until onion is tender. 2. Add minced garlic, and saute for 1 minute. 3. Stir in tomato sauce and remaining ingredients. 4. Bring to a boil, reduce heat, and simmer for 8 minutes. 5. Mash bean mixture with a potato mashed until thickened, leaving some of the beans whole. |
