Smashed Mexican Black Beans |

These were made up on a whim to accompany some enchiladas for dinner. Ingredients:
1 (15 ounce) can black beans, drained and rinsed |
1 tablespoon oil |
1 teaspoon garlic |
2 tablespoons beer |
1/4 cup enchilada sauce |
1 teaspoon lime juice |
Directions:
1. Heat oil in a frying pan over medium heat. Add garlic and cook for one minute. Add the beans, beer and enchilada sauce. 2. Stir fry until the majority of the liquid has evaporated. 3. With a potato masher, smash the beans until only about half are still whole. Take off the heat and add the lime. Season with salt and pepper as needed. |
