If you are watching carbs, this is a great alternative to mashed potatoes...If you aren't, which I'm not, it is still a yummy and different alternative. Plus, it will fool your kids into eating their (non-potato) veggies. Ingredients:
1 head of cauliflower (cut up into chunks) |
3 cups chicken stock |
4 tablespoons butter cut into pieces |
1 cup shredded cheddar (optional) |
1/4 cup grated parmesan |
salt |
pepper |
Directions:
1. Bring cauliflower and stock to a quick boil. 2. Reduce heat to simmer and cook covered 10 minutes. 3. Remove cover, raise heat to medium high and allow the broth to reduce by half, 2 minutes. 4. Add 2 tablespoons butter, cut into pieces and the cheeses and smash the cauliflower with a masher to the same consistency as desired for mashed potatoes. 5. Season the cauliflower with black pepper, a pinch of salt. |
