This zippy, healthy stew is very easy and quick to prepare. The hardest part is chopping the potatoes! Ingredients:
2 pounds yukon gold potatoes, chopped |
1 1/2 pounds baby carrots |
28 oz can crushed tomatoes |
3 tbsp garlic powder |
1 tbsp oregano |
1 tsp onion powder |
3/4 pound sliced mushrooms |
1 teaspoon turmeric |
1 teaspoon cayenne pepper |
3/4 teaspoon salt |
1/2 tsp crushed red pepper flakes |
1 1/2 cups water |
1 pound sea scallops |
1/2 pound halibut steak, sliced |
1 pound uncooked medium shrimp, peeled and deveined |
Directions:
1. Combine all ingredients but water, scallops, fish and shrimp in crockpot. 2. Cover and cook on low 5 hours. 3. Stir in the water, scallops, fish and shrimp. 4. Cover and cook for 15-20 minutes |
