This zippy, healthy stew is very easy and quick to prepare. The hardest part is chopping the potatoes!
Ingredients:
2 pounds yukon gold potatoes, chopped
1 1/2 pounds baby carrots
28 oz can crushed tomatoes
3 tbsp garlic powder
1 tbsp oregano
1 tsp onion powder
3/4 pound sliced mushrooms
1 teaspoon turmeric
1 teaspoon cayenne pepper
3/4 teaspoon salt
1/2 tsp crushed red pepper flakes
1 1/2 cups water
1 pound sea scallops
1/2 pound halibut steak, sliced
1 pound uncooked medium shrimp, peeled and deveined
Directions:
1. Combine all ingredients but water, scallops, fish and shrimp in crockpot.
2. Cover and cook on low 5 hours.
3. Stir in the water, scallops, fish and shrimp.
4. Cover and cook for 15-20 minutes
