Slow-Simmered Potato Soup

Created By: Janet Bauer from the Walmart in Sebring, FL I haven't tried this recipe yet but sounds scrumptious for chilly days. Also, this would serve a large crowd, and no cutting up all those potatoes.
Ingredients:
1 lb sliced bacon
2 (32 ounce) packages frozen frozen southern style hash brown potatoes
3 (14 ounce) cans chicken broth
3 (10 3/4 ounce) cans cream of chicken soup
2 (8 ounce) packages cream cheese, softened and cut up
1/2 cup minced onion
1 tablespoon parsley flakes
Directions:
1. In a large skillet cook bacon until crisp.
2. Drain on paper towels. Crumble, and set aside.
3. In a 5- to 6-quart crockery slow cooker combine potatoes, chicken broth, chicken soup, cream cheese, onions, and parsley.
4. Stir in bacon.
5. Cover and cook on high-heat setting for 4 to 5 hours or on low-heat setting for 8 to 10 hours.
6. Stir soup before serving.
