Slow It Down Mediterranean Stew |

Hearty, healthy, vegan flavour straight from the shores of the Mediterranean sea. Ingredients:
1 butternut squash, cubed |
2 cups cubed eggplant, with peel |
2 cups cubed zucchini |
1 (10 ounce) package frozen okra, thawed |
1 cup tomato sauce (home-made or store-bought) |
2 cups chopped onion |
2 ripe tomatoes, chopped |
3 carrots, sliced |
1/2 cup vegetable broth |
1/3 cup raisins |
4 cloves garlic, chopped |
1 teaspoon ground cumin |
1/2 teaspoon ground turmeric |
1/2 teaspoon crushed red pepper |
1/4 teaspoon ground cinnamon |
1/4 teaspoon paprika |
2 teaspoons oregano |
Directions:
1. Combine all ingredients in a slow cooker. Stir well. 2. Cover, and cook on LOW for 8 to 10 hours, or until vegetables are tender. |
