a hearty soup for the vegetable lovers. Slow cooked to perfection Ingredients:
/2 a rib of celery chopped |
1/2 onion chopped |
2 clove garlic |
1 tsp olive oil |
1/2 potato chopped roughly |
1 carrot chopped roughly |
1/2 c green beans cut into 1 |
1/2 yellow squash - chopped roughly |
1/2 c of marinara sauce (tomato basil) |
3 c of vegetable broth |
1 tbsp of basil leaf |
1 tsp of oregano |
3 tbsp of orzo pasta |
salt - to taste(since the marinara sauce will have salt adjust accordingly) |
black pepper |
Directions:
1. In a pan add olive oil and saute onion, garlic and celery for 1 min. Set the slow cooker on low for 4 hours. Add the onion mix; broth; marinara sauce; salt; pepper and all the vegetables except the squash. After 3 hours add the squash; pasta; oregano and basil and let it cook for 1 hour. Serve hot with garlic bread. |
