Slow Cooker Pork Loin Roast with Apple Cranberry Rice |

Very simple and tasty roast pork. Serve with a simple green salad for a complete meal. A boneless turkey breast can be used in place of the pork. Ingredients:
1 (5 pound) boneless pork loin roast |
2 teaspoons olive oil |
1 tablespoon herbes de provence (optional) |
salt and ground black pepper to taste |
4 cups cooked rice |
1 large yellow onion, chopped |
2 granny smith apples, chopped |
1 1/2 cups dried cranberries |
1 teaspoon salt |
1/4 teaspoon ground black pepper, or to taste |
Directions:
1. Place pork roast in a large slow cooker; drizzle with olive oil. Sprinkle in herbes de Provence; season with salt and black pepper to taste. 2. Mix rice, onion, apples, cranberries, 1 teaspoon salt, and 1/4 teaspoon black pepper together in a large bowl. Spoon rice mixture over and around pork. 3. Cover and cook on High for 6 hours or on Low for 8 to 10 hours. |
