Slow Cooker Peasant Potatoes |

I came across this recipe in an old cookbook. Ingredients:
1/4 cup butter |
1 large sweet onion, chopped |
2 large garlic cloves, chopped |
1/2 lb beef smoked sausage, 3/4 inch slices |
1 teaspoon dried oregano leaves |
6 medium yukon gold potatoes, cubed |
salt |
pepper |
2 cups sliced cabbage |
1 cup diced red bell pepper |
1/2 cup parmesan cheese |
Directions:
1. Melt butter in large skillet over medium heat. Add onion and garlic, cook and stir 5 minutes or until onion is transparent. Stir in sausage and oregano. Cook 5 minutes. Stir in potatoes, salt and black pepper, mix well. Transfer mixture to slow cooker. 2. Cover and cook on low 6 hours, stirring every hour. Add cabbage and bell peppers during last 30 minutes of cooking. 3. Top with Parmesan cheese before serving. |
