1. Slow Cooker Mexican Beef Soup 2. lb. Beef Stew Meat, cut into 1/2 inch cubes 3. ounces beef broth 4. cups water 5. ounces Mexican style chunky tomato sauce 6. tsp. ground cumin 7. /4 tsp. seasoned salt 8. /4 tsp. pepper 9. /2 tsp. garlic powder 10. lb. canned pinto beans, rinsed and drained 11. can of corn 12. /2 cup sour cream 13. Combine stew beef, broth, water, tomatoes and spices in an electric 14. slow cooker on low heat. Cover and cook 8 to 8 1/2 hours, or until 15. beef is tender. Increase heat to high. Stir in remaining ingredients, 16. except sour cream. Cover and heat another 10-20 minutes until hot. 17. Serve with a dollop of sour cream. |
