This is a warm tasty meal. it makes the house smell heavenly when you open the door. I serve it on garlic mashed red skin potatoes and sliced carrots with butter and tarragon Ingredients:
1 1/2 lb of round stew meat |
1-2 shallots sliced (depending on size) |
2 cloves minced garlic |
1 tbsp olive oil |
3 cups beef broth |
1/2 cup red wine |
3 tbsp tomato paste |
1 cup sliced crimini mushrooms |
1 cup sun dried tomato halves (in a pouch) |
1 tsp tarragon |
1 bay leaf |
salt and pepper |
1tbsp cornstarch dissoved in cold water |
Directions:
1. Brown meat in olive oil with shallots and garlic 2. Place in bottom of slow cooker 3. Combine beef broth, red wine and tomato paste pour over meat 4. Add sliced mushrooms,sun dried tomatoes ,bay leaf , salt and pepper 5. Cover and slow cook on low 6-7 hours 6. Before serving. turn slow cooker to high, add tarragon and cornstarch to thicken |
