Slow Cooker Honey-Lemon Chicken With Potatoes |

Found this recipe in a advertising booster for a small town. Haven't tried it yet, but sounds really good! Ingredients:
2 tablespoons olive oil |
salt and black pepper |
1 small onion, chopped |
thyme leaves |
1/4 cup honey |
8 bone-in skin-on chicken thighs |
1 1/2 lbs baby potatoes |
2 -3 garlic cloves, finely chopped or grated |
2 lemons, thinly sliced |
1/4 chicken stock or 1/4 water |
Directions:
1. In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and brown on both sides. 2. Scatter potatoes, onion, garlic, thyme, and lemon slices in crock pot. Season with salt and pepper. Lay browned chicken over this layer, and drizzle with honey. 3. Add stock/water, cover and cook, undisturbed for 4 hours on high, or 6-8 hours on low. |
