Slow cooker Hatch chile stew with sweet potato, corn and lime |

Ingredients:
2 whole(s) avacados |
3 cup(s) broth |
14 ounce(s) can fire roasted diced tomatoes |
3 clove(s) chpped garlic |
1 bunch(es) cilantro |
1 teaspoon(s) cumin |
1 whole(s) diced red onion |
2 ear(s) fresh corn cut off the cob |
1 pound(s) ground beef or turkey |
1 teaspoon(s) ground coriander |
2 whole(s) juiced limes |
1 whole(s) large sweet potato |
1 tablespoon(s) olive oil |
2 cup(s) roasted chopped hatch chilies |
8 ounce(s) sour cream |
1 pinch(s) sugar |
Directions:
1. Brown ground beef in skillet and pour off fat. Dump beef in slow cooker. Add the olive oil, garlic, onion, Hatch chiles, sweet potato, corn and tomatoes. Stir and add enough broth to cover ingredients. If you like your chili soupy add more! Add in the spices a little salt and pepper. Stir and cover and cook on low for 6 hours. Taste..if too spicy add a pinch of sugar. 2. Add lime juice just before serving. 3. serve with sour cream, slices of avocado and cilantro on top |
