Slow Cooker Harvest Sausage Vegetable Casserole |

Serve with Dijon and crusty bread. Save time by using coleslaw mix , baby carrots and you can use your favorite diced tomatoes too! Increasing quantities is easy! Ingredients:
3 tbl zesty italian dressing |
1 tbl dijon mustard |
2 medium unpeeled potatoes, cut into 1 inch slices (2 cups) |
2 medium onions, sliced (1 1/2 cups) |
2 medium carrots, vut into 1 inch pieces |
2 cups of green cabbage, chopped |
1 ring turkey kielbasa, cut into 1 inch slices (or use the salty one, if you must) |
1 can (14.5 oa) diced tomato with green pepper, celery and onion, undrained |
Directions:
1. Mix dressing and mustard 2. Arrange potato slices in an even layer in a 3 1/2 to 4 qt slow cooker 3. Drizzle with 1/3 of dressing mixture 4. Arrange onion slices on potatoes; drizzle with 1/3 of dressing mixture 5. Top with carrots and cabbage; drizzle with remaining dressing 6. Arrange sausage slices on vegetables. Pour tomatoes enenly over sausage 7. Cover and cook 6 to 7 hours on low or until vegetables are tender |
