Ingredients:
4 medium tomatoes, chopped
2 medium potatoes, chopped
2 cups green beans
2 small zucchini, cubed
1 medium yellow squash, cubed
4 small carrots, sliced
2 celery stalks, sliced
1 cup eggplant, cubed
1 cup portabello mushrooms, sliced
1 medium onion, chopped
3 teaspoons garlic
1 tablespoon parsley
4 cups v-8 juice
Directions:
1. Combine all ingredients in a 5 quart slow cooker. Cover and cook on low for 7-8 hours or until the vegetables are tender.
