4 medium tomatoes, chopped |
2 medium potatoes, chopped |
2 cups green beans |
2 small zucchini, cubed |
1 medium yellow squash, cubed |
4 small carrots, sliced |
2 celery stalks, sliced |
1 cup eggplant, cubed |
1 cup portabello mushrooms, sliced |
1 medium onion, chopped |
3 teaspoons garlic |
1 tablespoon parsley |
4 cups v-8 juice |
Directions:
1. Combine all ingredients in a 5 quart slow cooker. Cover and cook on low for 7-8 hours or until the vegetables are tender. |
