Under 500 cals per serving, even better if not served with rice. Modified from Healthy Crockery Cookery by Mable Hoffman Ingredients:
1 pound chicken breast |
1/2 cup green chilies |
1 small onion |
1 clove garlic |
1 tbs chili powder |
2 tbs cornmeal |
3 tbs unsweetened cocoa powder |
1 tsp ground cumin |
1 tsp oregano |
1/2 tsp salt |
1/4 tsp ground cinnamon |
3/4 cup ro-tel tomatoes |
1/2 cup water |
1 1/2 tbs peanut butter, no sugar |
Directions:
1. Combine chicken, chili pepper, onion and garlic in 3 1/2 quart slow cooker. 2. In a small bowl, combine chili powder, cornmeal, cocoa powder, cumin, oregano, salt, and cinnamon. Stir into chicken mixture. 3. Whisk together Ro-Tel, peanut butter, and water; pour over chicken mixture and mix well. 4. Cover and cook on low for 4-5 hours. 5. Serve hot over cooked rice. |
